I mentioned earlier this week that it’s national grilled cheese month (I imagine in the US, but Amy made a good point- we should get to celebrate their fun holidays too). So now that I’ve rounded up the most delicious sounding grilled cheeses on the web, I made one of my own. Meet the tastiest little thing I’ve made in a while: Sweet Apple, Maple Bacon, and Brie Grilled Cheese on French Loaf. Yum.
This sammy was sweet with a bit of smoky flavour from the bacon and the perfect amount of gooey from the brie. I’d say it was a win all around. Here’s what you need to make your own:
- 1/4 Apple
- 2 Strips of Maple Bacon
- Brie (as much as you want… you know you want a lot).
- French loaf (I used whole wheat)
- Butter
First, I cut my apple into thin slivers to saute. I’m not a huge fan of raw apples and pretty much every recipe I found that had cheese and apple had them raw. No thank you. This is really what makes this recipe good in my books (and a bit different from what’s out there). I cooked the apple until it was fragrant then set it aside.
Next, I cooked the bacon until it was just crisp (but not bacon-bit crispy). I drained it and dabbed off the grease before assembling my sandwich. I buttered the outside of the bread then used the same pan to fry it up. Make sure your heat is high enough to brown the outside, but low enough that the cheese melts before the bread burns.
That’s it! Then you enjoy it and make another one (or two) because you can’t get enough.

And- if I wasn’t smack dab in the middle of renovations, I’d love to celebrate Grilled Cheese Month with a party. You could make a mass amount of good old fashioned grilled cheeses like this. And I’d serve them as mini sandwiches like this- so adorable! Doesn’t it look classy on top of shot glasses of tomato soup? Plus if you were to do a variety of kinds- they’re so small you could try them all. Or have guests make their own like this.
